My favorite food in the world, as crazy as that may seem at the ripe old age of 32, is chicken tenders. I know it’s technically a “kids food” but it’s always been my favorite. There’s something about it that’s comforting, tasty, and versatile. So versatile. With a side of honey mustard? Buffalo style? On a salad? Yes please. The possibilities are endless Unfortunately with breading, it’s off limits on a low carb diet. UNTIL NOW. Why, you ask? Because there’s a PERFECT solution. Pork dust.
Pork dust is a breadcrumb solution made out of pork rinds. You can buy it on Amazon, link is below. It’s so good! I mix it and season it and voila, the perfect chicken tenders. Deets below.
Ingredients in the Perfect Low Carb Chicken Tenders
1 lb. boneless skinless chicken cut into tenders
2 oz Pork Dust Pork Rind Breadcrumbs
1/4 cup Honeyville Blanched Almond Flour Super Fine Grind
1 tbsp Bob’s Red Mill Organic Coconut Flour
1/3 cup olive oil (NOT extra virgin, as it doesn’t fry well at high temperatures)
Heat a large pan over medium-high heat. Add the olive oil. As it heats, crack the egg in a disk and whisk with a fork. Mix the pork dust, almond flour, and coconut flour. Dip each chicken tender in the egg and then the “breading” and place in the pan. Cook until golden brown, about 3-5 minutes depending on heat, and flip. It should be a nice golden brown when you flip, not too light or too dark. Cook on the other side until cooked through. Let cool on a paper towel and rest for 7-10 minutes to ensure all the juices stay intact. And then ENJOY, because these chicken tenders are AWESOME.
