These chewy, wholesome granola bars are great for a snack, dessert, or as part of your breakfast. Sometimes I’ll have one with a banana or some Greek yogurt; it’s a great way to start the day.

3 cups quick oats

1/3 cup raw light brown sugar, packed

2 tbsp organic ground cinnamon

½ tsp salt

2/3 cup Smuckers all-natural chunky peanut butter

1/2 cup all-natural applesauce

1 tbsp 100% Pure Organic Madhava Light Agave Nectar

2 tsp vanilla extract

1 cage-free egg

8 tbsp semi-sweet chocolate chips

Preheat oven to 350 degrees F. Combine oats, sugar, salt, and cinnamon in a medium bowl and set aside. In a large bowl, mix together peanut butter, applesauce, agave, vanilla, and egg. If you have a stand mixer, use the paddle attachment. Slowly mix in dry ingredients. Add chocolate chips. Batter will be thick. Place wax paper on a 9″ x 13″ baking sheet and spread batter into a thin layer, approximately 1/2″ thick. Press down firmly and spread out so it is even.

Bake for 20-25 minutes or until edges start to slightly brown. When done and cooled, cut into three horizontal sections and 9 vertical sections to make 27 bars.

Per granola bar: 110 calories, 13 g carbs, 5 g fat, 3 g protein, 1 g fiber, 6 g sugar.

Please note: I usually use all-natural/organic ingredients from Trader Joes or Whole Foods. Depending on the brands you select, the nutrition facts may need to be adjusted. If you want thicker or larger bars, use a smaller dish and adjust cooking time. Nutrition facts will need to be adjusted as well.
