Burgers. They really are delicious, aren’t they? They can actually be fairly healthy, when you remove the bun. This quick and easy recipe is for a mustard and ale cheddar bacon burger. The combination of flavors is beyond delicious. You won’t even miss the bun.
Ingredients in Mustard & Ale Cheddar Bacon Burgers
10 ounces grass fed 80/20 ground beef
3 ounces mustard & ale cheddar ( I get it from Trader Joe’s, but you can find another brand)
2 slices bacon
2 cups arugula
1 tbsp olive oil
1 tbsp whole grain mustard
Chef Paul Prudomme’s Vegetable Magic
Directions to make the Burgers
Heat a pan over medium heat. Form burger meat into 2 patties. I usually do one that’s 6 ounces for my boyfriend and one that’s 4 ounces for me, but you can divide in half for two 5-ounce burgers. Add a little vegetable magic, salt and pepper to each side of the patties. When pan is hot, put in bacon and cook until crisp. Remove the bacon and half the bacon fat, leaving some for the burgers to cook in. Place burger patties in pan and cook for approximately 3-4 minutes. Flip once the burgers are starting to get a slight char. Place half of the sliced cheese on top of each burger. Cut each bacon piece in half and place in a criss-cross pattern on each burger. You can use a thermometer to make sure they get to 160 degrees Fahrenheit, or cook to desired doneness.
In a small bowl, mix arugula, lemon juice, olive oil, mustard, and salt and pepper. Divide into two salads, one for each burger. When burgers are done, serve on top of the salad.
The delicious, rich flavors of mustard, horseradish, bacon, and cheddar really come through in this delicious dish. I usually serve with turnip fries. Enjoy!
