This quick and easy recipe for Mediterranean Marinated Feta is so easy to prepare and so versatile. You can eat with fresh or cooked veggies, low carb pitas, salads, meats, or even on its own. It’s so flavorful and it only gets better as it sits in your fridge. I used to go to Whole Foods to buy the marinated feta and olives by the pound, but since I hate olives, I’d try to scoop out as much as I could without olives. It was a hassle, and not to mention expensive. This recipe makes ten servings for about $5 (assuming you have the spices and oil in your pantry already).
Ingredients in Mediterranean Marinated Feta
1 block of sheeps milk feta cheese
1/3 cup olive oil
1 tsp dried thyme
1 tsp dried oregano
1 Tbsp crushed peppercorns
1 large or 2 small bay leafs

Cut the feta cheese into small cubes.
Crush the peppercorns with the side of a knife blade. This is important; they need to be crushed and not cracked from a mill or ground. This method allows the pepper to really burst with flavor and adds some great texture in the feta.
Add the spices and olive oil in the bowl and mix.
