Low Carb Buffalo Chicken Pizza

I learned today, that if you believe in something really strongly, and you put your mind to it, you can achieve great things. Especially if that thing you believe in so strongly is Buffalo Chicken Pizza. Because if you love it, nothing can stop you from doing whatever it takes to make it low carb. And now, we have Low Carb Buffalo Chicken Pizza!

Buffalo Chicken Pizza is pretty much my favorite food of all time. But, pizza is so NOT low carb, so I often have to stay away. I’ve tested and experimented to finally came up with a kickass Low Carb Buffalo Chicken Pizza recipe and I couldn’t be happier! It’s got all the hallmarks of a regular buffalo chicken pizza- crunchy yet soft crust, spicy and crispy buffalo chicken, and creamy mozzarella and blue cheese with a zingy sauce. But with no wheat, it’s keto perfection!

How to Make Low Carb Buffalo Chicken Pizza

For the Crust

For the crust, I adapted my recipe from Fathead Pizza Crust. You can refer to that recipe for more details, but here are my ratio of ingredients:

    1 cup shredded mozzarella
    1 tbs cream cheese
    1 egg

Preheat oven to 400F degrees. Melt the cheeses in a microwave bowl, about 30-45 seconds. Add the egg and almond flour and mix well. Grease a cookie sheet sufficiently or use parchment paper and place dough on the sheet. Place another piece of parchment paper on top and roll out dough onto the sheet. Place in preheated oven for about 10 minutes, until edges start to get crispy and it puffs up. Take out and set aside.

The pizza crust will be slightly browned on the edges and start to puff up when it’s ready for the toppings.


For the chicken

I always fry chicken the same way, no matter if it’s chicken breast or chicken fingers. Check out the recipehere. While the dough is cooking, you can prep the chicken. Once it’s done, take it out of the pan and let it rest for 10 minutes before dicing.

For the toppings:

    1/2 cup Part-Skim Mozzarella Cheese (Don’t go full fat or it will be too heavy and wet)
    1/2 crispy chicken breast, diced
    1 tbsp crumbled blue cheese
    1 tbsp Kerrygold butter
    2 tbsp Frank’s Buffalo Sauce


Assembling

Spread the mozzarella and blue cheese over the crust. Add the diced chicken. Melt the butter with the buffalo sauce and drizzle on top. See, it’s not that hard! Yet, it’s LIFE CHANGING.
