I’ve seen some recipes where you can make pancakes with bananas and eggs, so I decided to do some experimenting to make a healthy, clean pancake. Then I thought, let’s add protein to make it a real powerhouse breakfast. After a few tries, I came up with this recipe and it really works. Because there is no flour, they are light and fluffy and not like traditional pancakes which can be heavy and seem to expand in your stomach. These are perfect to start your day, especially if you’re starting off with a workout. It’s high in protein, low in calories, super low in fat, and so tasty you don’t even need syrup (though you have enough wiggle room with the nutrition to add some if you like!
1 small ripe banana
2 egg whites
1 tsp Blue Diamond Almond Coconut Milk
1/2 scoop Reservage Organics Vanilla Whey Protein
1/4 tsp Trader Joe’s Organic Virgin Coconut Oil
1 tsp cinnamon
1 tsp pure maple syrup
1/2 cup blueberries
and/or whatever toppings you like!
Mash the banana and mix it with the egg whites, almond coconut milk, protein powder. If you want to add cinnamon, add it in the mixture. Heat a pan on low heat. Add 1/4 tsp coconut oil to prevent the batter from sticking. I filled a 1/4 cup measuring cup about three-quarters of the way full for each pancake and used to pour the batter in the pan to get nice even size pancakes. Cook for a few minutes until golden brown, flip, and repeat. They are delicious enough to be eaten alone, but feel free to add berries, syrup, jam, or whatever toppings you like. Makes about 12 small silver dollar sized pancakes. And that’s all one serving! Unless you’re sweet enough to share. Good luck with that!!
