I can’t eat traditional pancakes without wanting to go straight back to bed after with a carb hangover…which makes them a less than ideal way to start my day. But I wanted to make peace with this breakfast staple, so I gave them a wheat-free, gluten-free, superfood makeover with some fiber and omega packed chia seeds, old fashioned oats, and protein powder. Now it’s the perfect breakfast!

Ingredients
2 Tbsp Bob’s Red Mill Gluten-Free Old Fashioned Oats
1 Tbsp Bob’s Red Mill Chia Seeds
3 Tbsp water
1/2 small banana
2 scoops Tera’s Whey Bourbon Vanilla
Protein Powder
1/4 cup Blue Diamond Almond Breeze Unsweetened Vanilla Almond Milk
1/2 tsp Pure Vanilla Extract

Directions
In a small food processor or blender, grind the oats into a flour and set aside. Add water to chia seeds and let sit for five minutes. Blend with the banana. They will form a gel which acts like an egg. Then add the protein powder, almond milk, and vanilla extract and blend well before adding the oats.

Heat a nonstick pan over medium-low heat. Add a tiny bit of coconut oil. I usually put about a half a teaspoon on a paper towel and wipe down the pan with it so the pancakes don’t stick. You can use cooking spray or whatever you prefer. Cook until golden brown and flip. Cook until cooked through.

Top with fruit or pure maple syrup or anything you choose. This will really get your day going the right way with protein, fiber, and heart-healthy omega-3’s…way more than traditional my-day-is-over-before-it-started-because-they-made-me-want-to-go-back-to-sleep pancakes. Enjoy!
