Arrested Development is one of my favorite shows on the planet, and I’ve always wanted to have one of their frozen bananas. How good do they look?? I was inspired by the amazing hit show and made these little bites in their honor. I’m sure they would be a best-seller at the banana stand! And they are the perfect snack to enjoy while watching the entire series on Netflix!!
I mean, is there anything better than peanut butter? And chocolate? And bananas? And ice cream? Okay well there is no ice cream in here but they really do taste like little bon bons! They are frozen and delicious and you will love them, I am sure of it!! These are perfect to stash in the freezer and have a couple when you want a snack. At about 20 calories each, you can enjoy a bunch without breaking the bank!
Choose a banana that is still not quite ripe, as it has more resistant starch which keeps you fuller longer. An all-natural peanut butter gives you some super healthy mono- and polyunsaturated fat, reservatrol, and protein. Super dark chocolate has higher levels of antioxidants, and though the bar I used is too bitter (in my opinion) to enjoy straight up, it is perfect as a coating for these babies. And cinnamon helps to keep your blood sugar from spiking and adds a little bit of extra flavor.
1 medium banana
2 tbsp all-natural chunky peanut butter
1 tsp cinnamon
1/2 Green & Black’s Organic Dark 85% Cacao Bar
Mix 2 tbsp peanut butter with 1 tsp cinnamon. Spread each banana slice with a small amount of the peanut butter & cinnamon mixture. Place the chocolate on a microwave safe plate and heat until melted. Dip each slice in the mixture to coat. I used steak knifes to maneuver the slices in the melted chocolate, because they acted as tony spatulas to spread and lift. You can also use toothpicks. Be careful not to burn yourself! You can also use a spoon to spread the chocolate lightly over the top. Then lift the piece up with your knife or toothpicks and transfer to the tray lined with parchment paper. Freeze until chocolate is fully solid, about 20-30 minutes. You can store them in the freezer in a container.
