Banana Oat Protein Waffles


Some say breakfast is the most important meal of the day. When I have some extra time on weekend mornings, I like to play around in the kitchen until I come up with something creative that will be warm and comforting but also get me ready to take on the day. This breakfast is a perfect wake-up call and pre-workout meal with heart-healthy carbs from the old fashioned oats and banana, some protein from the egg white and protein powder, and heart-healthy fats from flaxseed meal and walnuts.

1/2 Banana
1 Egg White
1 scoop Tera’s Whey Bourbon Vanilla Protein Powder
1 Tbsp Trader Joe’s Unsweetened Vanilla Almond Milk
1/4 tsp Trader Joes’s Pure Vanilla Extract
1 Tbsp Bob’s Red Mill Ground Flaxseed Meal
2 Tbsp Bob’s Red Mill Old Fashioned Rolled Oats, ground into flour

Optional Topping Ideas
Chopped Walnuts
Organic Maple Syrup
Fresh Berries
Peanut Butter
Anything you like!

The easiest way is to put all ingredients in a blender and blend for 15 seconds. Alternatively you can mix all dry ingredients together, then combine with wet ingredients.

Turn your waffle maker on low heat (low and slow cooks this best…check on it every minute or so to make sure it doesn’t burn. It will cook quickly) When it heats up, spray with cooking spray and pour batter on.

Makes 1 waffle on a standard round waffle maker. I topped mine with some more of the banana, some chopped walnuts and a maple syrup drizzle. So good! Enjoy!
