When it’s hot out, I want to eat lighter. Low carb summer snack ideas may be few and far between…until now! Fresh, crisp flavors are not what you think of when you think of keto snacks or LCHF treats. But, you can find great low carb summer snack ideas that are not heavy. Read on!

Avocado and Feta Lettuce Cups

Feta and avocado are such great flavors together. I love marinating my own feta cheese. You can find the recipe here. Keep it on hand, it works so well in so many recipes, like grilled chicken and vegetables. For a light meal or snack, it pairs great with diced avocado in baby gem lettuce leaves. Drizzle with some olive oil and enjoy!

Berries and Cream

Thankfully, berries are not off limits on a low carb diet! I stick to strawberries, blackberries, and blueberries. Keeping it to half a cup is good to keep carbs low. For the cream, I mix a few tablespoons of heavy cream with either half a packet of Splenda or half a teaspoon of Swerve sweetener. Choose whatever sweetener you like to make it just a tiny bit sweet. It tastes sinful, but it’s not. A keto lover’s dream.

Cucumber Cups with Lemon Hummus

Cucumber slices work great instead of typical chips or crackers. Slice them up and have with hummus! I love lemon hummus. I modeled my snack off of this recipe from Giada, which uses red pepper hummus, but I think lemon hummus has the perfect summer freshness. Experiment with any type of hummus you like, just check the carbs. One half of medium-sized cucumber (8.25 inches) has about 4.5 net carbs, and lemon hummus like Sabre Lemon Twist has 4g net carbs for 2 tablespoons. That is one healthy, refreshing snack with only 8g net carbs.

Italian Lettuce Cups

These are really versatile- use any types of italian meats like prosciutto, salami, cappicola, bresaola, pepperoni…just top a slice or two of any italian meat over lettuce, add some diced marinated mozzarella (I buy mine at Trader Joe’s) and enjoy! Quick, easy, and keto-friendly.

Frozen Banana Chocolate Peanut Butter Bites

Eating bananas is generally off-plan for keto, but if you just have a little, I think it’s A-okay! I pair bananas with super dark chocolate and fat-filled chunky peanut butter for a great keto snack. Find the recipe here.
