Baked chicken is one of my favorite things to cook, because it is so versatile and easy to make. If you make a few servings at once, you can use it for meals throughout the week. I like to switch it up by using different spice combinations to season it. This recipe uses fresh lemon and thyme for a nice flavor that pairs well with any side dish or salad. I always prefer organic or all-natural so that there are no hormones or chemicals, but you can get whatever kind you like. This is a versatile dish, so you can enjoy this baked lemon thyme chicken with almost any side dish.
Ingredients in Baked Lemon Thyme Chicken
1 lb Organic or All-Natural Boneless Skinless Chicken Breasts
1 tbsp Olive Oil
4 Sprigs Fresh Thyme
1 Small Lemon
Fresh Ground Pepper
Preheat oven to 350 degrees. Lightly pound chicken breasts. Drizzle half of the olive oil on bottom of baking dish and place chicken breasts in the dish. Lightly salt and pepper the chicken. Cut the lemon in half. Squeeze one half over the chicken, being careful not to get any seeds in your dish. Slice the other half and place over the chicken. Remove the thyme leaves from the stems by sliding your fingers down the stem in the opposite direction of the leaves and sprinkling over the chicken. Drizzle the remaining olive oil on top.
Cover the dish with tinfoil to lock in the moisture and place in the oven. The tinfoil helps to keep your chicken from drying out, and you can remove it after 25 minutes. Cook your baked lemon thyme chicken for 30-40 minutes or until it is cooked through and reaches an internal temperature of 170 degrees.
